Crock Pot Baked Potatoes

Take 4 baking potatoes, rinse & prick with a fork.

Brush with Olive Oil.

Sprinkle with Kosher or coarse salt.

Wrap in foil.

Place in slow cooker on High for 4 1/2 to 5 hrs, or Low 7 to 8 hrs.

Reese's Crepe


So I made crepes.  And I wanted a peanut butter cup.  And then I made them both, together.

Basic Crepe Recipe
  • 2 eggs
  • 1 cup flour
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter

Preparation:

Measure all ingredients in to blender jar; blend for 30 seconds. Scrape down sides. Blend for 15 seconds more. Cover and let sit for 1 hour.


I added 1 Tbsp peanute butter inside and drizzled with sugar free chocolate sauce, but it was SO good!

Popcorn Italiano!

   When I was a kid, I remember going to my friend Sandy Shelton's house and her mom sprinkled italian seasoning on the popcorn before we watched a movie and I was like, "what the...?" .  I had never heard of it before, but ever since I've called it italian popcorn.  Chef Fabio had this little blog online the other day and it was a twist on the old recipe.
   
   I also never knew how easy it was to pop popcorn in a little oil on the stove.  My days of Jiffy Pop really never helped me make the connection.  It's so simple and kinda fun!  I still use my Orville Redenbacher Air Popper circa 1985, but this is cool and it smells SO good!

Grill Packet Potatoes

This is a manipulation of my Dad's recipe.  You can play around with spices, like a little parsley on top, or adding some chili or red pepper for heat.  It's easy on the grill though!  Some people online suggest adding monterey jack the last 5 minutes by opening the packet and cooking open faced.  I'll try that next time.

2-3 lbs red bliss potatoes
1 yellow onion
1 C baby carrots (or sliced carrots)
3-4 cloves garlic (removed from hull)
3 T butter
Kosher salt
(option: crisp, crumbled bacon)


Cut red bliss potatoes into quarters (or halves if small). 
Cut one small yellow onion into eighths.

In 2 sheets heavy duty foil,  add all vegetables.  Salt and pepper as desired. Cut butter into smaller squared and dot pocket with butter. 

Cook on High heat over coals for 20 minutes, then move to low heat/off coals for 5-10 minutes as you cook the main entree. 

Be careful opening pocket w/steam.

Triple D taste test in Spokane, WA

While on vacation in Spokane, we tried a "Diners, Drive-Ins, and Drives" restaurant called Waddell's Pub and Grill.  I tried the Rube Waddell Burger.  The burger was excellent and included a 6 oz. hamburger pattie, slices of corned beef, sauerkraut, Swiss cheese, caramelized onions and 1000 Island dressing spread.  I was disappointed by the fries, however, as they were overfried and hard.  Also, the service was a bit disappointing.  The host seemed too busy to seat us and I think he was the owner.  The waitress was late to our table and forgot the beer menu then was annoyed when we asked for it a second time.  Too bad!   

 

Eagle Rock, CA's the Oinkster was a far, far better Triple D recommendation.  :) 

I also just learned that Schooner or Later at the beach was also on Triple D.  They have great food, great ambiance, and the best mimosa/Sunday brunch for Mother's Day!

Green Salad dressing

1 tsp dijon mustard
1 T basalmic vinegar
3 T olive oil
1 clove garlic
Splash soy sauce

Cut clove & rub on wooden salad bowl. Whisk other ingredients together. Toss with salad greens.
